- APC or PPA = F&B revenue ÷ covers

- Inventory usage = Beginning inventory + purchases − ending inventory
- Theoretical usage is what recipes and recorded sales indicate should have been used; actual usage is what inventory movement shows was used.

APPENDIX 2 — ROOM-STATUS CAUTION
VC, VD, OC, OD, OOO, OOS, DND, DNCO, MUR, and similar codes vary by PMS and hotel policy. They can affect sellable inventory, housekeeping assignments, engineering response, and revenue reporting. FOH Digital should preserve both a normalized meaning and the original property-specific code when integrating these values.
